#Diabetic Cranberry Jelly #recipe

Ingredients:
1 c. unsweetened grape juice
1/4 tsp. lemon juice
2 tbsp. sugar substitute
1 tbsp. plain gelatin
1 tbsp. cornstarch

Preparation:
Mix lemon juice, sugar substitute, gelatin and cornstarch.  Add fruit juice and stir well to mix.  Boil hard for 3 minutes, stirring constantly.  Makes 1 small jar. Store in refrigerator

1/3 c. instant nonfat dry milk
1/3 c. ice water
1/2 tsp. liquid sweetener

Preparation:
Chill small glass bowl and the mixer beaters.  Combine ingredients and whip on high speed with mixer until consistency of whipped cream.  Makes about 10 servings of 2 tablespoons

Healthy Bacon and Eggs

Ingredients:
8 eggs
1 cup mayonnaise 
½ pound bacon  
1 cup pepper jack cheese
3 Tbs. chives
4 thin radishes – sliced thin
1 head lettuce  Ready to serve
1 avocado diced
 
Preparation:
 Boil the eggs, until hard and dice them. Fry the bacon and crumble it. Mix all ingredients in a bowl and serve.

Wild Meets the Chicken!

CHICKEN
            &
 WILD RICE
 
 
Ingredients:
 
1 cut-up chicken
1 pkg. herb wild rice mix (no instant)
1 can cream of celery soup
1 pkg. onion soup mix
2 soup cans water
 
Preparation:
 
Pour dry rice in buttered roasting pan, place chicken on top. Sprinkle onion soup mix on top. Mix cream of celery soup and water, pour all over the chicken. Bake inovenat 350 degrees for 2 hours. A 1/2 hour before done, pour melted butter over chicken.

Italian Chicken for One #Recipe

Ingredients:
1 (3 oz.) chicken breast, boned & skinned
2 tbsp. (any brand) bottled diet Italian dressing

 
Preparation:
Marinate chicken in dressing overnight in a covered bowel or zipper bag in a refrigerator. Place in baking dish and bake in oven for one hour at 350 degrees. No additional seasonings are necessary. This will be very tender and juicy, it is the perfect treat for one.
