VEGETABLEBEEF SOUP
Ingredients:
1 lbs. ground chuck
1 cp. chopped onion
1 28 oz. cn. whole tomatoes (chopped)
3 cup diced potatoes
1 16 oz. can cut green beans
2 tsp. chili powder
2-3 dashes cayenne pepper sauce
2 10 1/2 oz. cans condensed beef bouillon
1 cp. chopped celery
1 cp. sliced carrots
1 tsp. salt
1 tsp. Worcestershire sauce
Preparation: Brown meat with onion and celery; drain fat. Stir in the remaining ingredients and add 1 or 2 cups of water. |

Olive Salad
Ingredients: ½ lb. Grape tomatoes 12 oz. Mozzarella
rubbed with fresh basil and chopped garlic 1 jar Green olives
stuffed with garlic 1 6oz. Can of black olives, pitted and drained 1 jar of Kalamata Olives, pitted and drained ¼ cp. Extra Virgin Olive Oil Salt Pepper
Preparation: Combine all ingredients and toss with a the extra virgin
olive oil add salt and pepper to taste.

SCALLOPED
POTATOES
Ingredients:
10 large Potatoes, thin slice 2 large Onions, chopped 2 cans Cheddar cheese soup, condensed 1 cup Milk
Preparation:
In a small bowl, combine soup with milk. In slow cooker, layer
one half the potatoes and one half the chopped onions; spread half of
the soup-milk mixture. Repeat layering using the rest of ingredients. Cover and cook on low for 6-8 hours, high for 3-4 hours.

Grilled Onions
Ingredients: 1 large Vidalia onion 1 beef bouillon
cube 2 tbsp butter 4 tbsp Worcestershire sauce
Preparation: Peel outside layer of onion. Place beef cube in a small
cutout in the top of onion. Wrap onion and butter in foil and douse with
Worcestershire sauce. Close up the foil and place on grill (low heat) for 30-40
minutes or until onion is translucent. Serve over steak!

Broccoli Salad
Ingredients:
3 cups Broccoli Florets
½ cup Grated Sharp Cheddar Cheese ½ cup Red Onion, Sliced 3 tbs. Bacon Bits
Dressing: ¾ cup salad dressing
3 tbs. Sugar 1½ Tbs. Vinegar
Preparation:
Combine broccoli florets, cheese, onion and bacon bits. Mix salad dressing, sugar, vinegar and toss with broccoli mixture.

Healthy Bacon and Eggs
Ingredients: 8 eggs
1 cup mayonnaise ½ pound bacon 1
cup pepper jack cheese 3 Tbs. chives 4 thin radishes – sliced thin 1 head lettuce Ready to serve
1
avocado diced
Preparation: Boil the eggs,
until hard and dice them. Fry the bacon and crumble it. Mix all ingredients in
a bowl and serve.

BAKED
POTATOES
Ingredients:
10 to 12 potatoes Aluminum foil
Preparation:
Prick potatoes with a fork and wrap each in foil. Fill slow
cooker/Crock Pot with potatoes. Cover and cook on low 8 to 10 hours. (High 2
1/4 to 4.) Do not add water.

CARROT
PUDDING
Ingredients:
4 large carrots, cooked and grated 1 small onion, grated 1/2 teaspoon salt 1/4 teaspoon nutmeg 1 tablespoon sugar 1 cup milk 3 eggs, beaten
Preparation:
Mix carrots, onion, salt, nutmeg, sugar, milk, and eggs.
Pour into slow cooker and cook on high for 3-4 hours.

Stuffed Zucchini
Ingredients: 2 medium zucchini 2 sweet Italian sausages 1 small onion,
chopped 1 8 oz. Can
mushrooms, drained 1 tbs. butter Salt and pepper to taste 2 slices bread
(pulse in blender until crumbs yields approx. 1 cup fresh crumbs) 1 tbs. grated
Parmesan cheese ½ fresh tomato, chopped Slices of
mozzarella or provolone cheese (optional)
Preparation: Cut zucchini in half lengthwise and steam about 5
minutes. Remove center to about ¾ inch of shell and set aside. |
