It is our favorite time of year, time to get ready for the fresh tomatoes and everything that can be made from these awesome little fruits.We have a garden and every year we plant lots of tomatoes, in years past we have had over 350 lbs. of them. One of our favorite tomato treats is fresh salsa and we would like to share one of our preferred recipes. This salsa has a tangy taste that tempts the taste buds leaving you wanting more.
What kind of tomatoes should I use?
Our favorite tomatoes for salsa is actually a mix, canned tomatoes from the store will work but there is no comparison to fresh. |

Fruit Salsa
Ingredients: ½ cup Cantaloupe, diced ½ cup fresh
pineapple, diced ¼ cup red bell pepper, diced ¼ cup yellow bell
pepper, diced ¼ cup purple
onion, diced ½ Tbs. Lime Juice 1 tbs. Fresh Mint
leaves, minced 1 tbs. Light brown
sugar, packed 1 tsp. Jalapeno pepper, minced ¼ tsp salt ¼ tsp. Lime zest, minced
Preparation: In bowl mix all ingredients
together and serve. If you want larger amounts double accordingly.

Summer Salsa Dip
Ingredients: 1 16oz. Sour Cream 1 14oz. Jar Salsa
(mild, medium, or hot) 1 8oz. Bag
shredded Mexican Cheese 1 lg. Tomato 1 lg. Green Pepper Tortilla Chips
Preparation: In a 10x14 inch pan spread the sour cream evenly. Add the
salsa and uniformly over the Sour Cream. Chop the tomato and green pepper, then
spread on the salsa add the 8 oz. Bag of cheese on the tomatoes and green
peppers let sit 15 minutes serve with tortilla chips.

Fruit Salsa Ingredients: 1 Mango, peeled and cut into ¼ - inch cubes (1cup) ½ cup diced Red Bell Pepper 2 Kiwi, peeled and diced ¼ cup sliced Green Onions 2 tablespoons snipped fresh Cilantro 1 Lime 1 Small Jalapeno, seeded and chopped 1 can (8 ounces) crushed pineapple in juice, not drained Preparation: Cut mango into ¼ inch cubes, dice bell pepper and kiwi using a knife. Thinly slice green onions and snip cilantro. Zest lime to measure1-teaspoon juice. |

Salsa Dip Ingredients: 1 16oz.Sour Cream 1 14oz. Jar Salsa Pick your Heat 1 8oz. Bag shredded Mexican Cheese 1 lg. Tomato 1 lg. Green Pepper Tortilla Chips Preparation: In a 10x14 inch pan spread sour cream on bottom of pan, Spread the Salsa on top of Sour Cream. Chop the tomato and green pepper, sprinkle on the salsa then sprinkle the 8 oz. Bag of cheese on the tomatoes and green peppers Let sit 15 minutes and serve with tortilla chips |

Some Like It hot!!!!* Ingredients: 10 Roma Tomatoes 3 Large White Onions 20 Habenero Peppers * 15 Serrano Peppers * 5 Dried Red peppers 10 Cloves Garlic 1/3 Cp Cilantro 1/4 Cp Salt 1 tbsp. Mexican Oregano 1 tbsp. Cayenne Pepper 1/8 tsp. Liquid Smoke Juice of 1 Lime Directions: Dice tomatoes to your desired size (this will increase or decrease the texture of the salsa). Cut up the peppers (were gloves*) and mix in a bowl with Cilantro, salt, oregano, Cayanne and Liquid smoke. |
