It is our favorite time of year, time to get ready for the fresh tomatoes and everything that can be made from these awesome little fruits.We have a garden and every year we plant lots of tomatoes, in years past we have had over 350 lbs. of them. One of our favorite tomato treats is fresh salsa and we would like to share one of our preferred recipes. This salsa has a tangy taste that tempts the taste buds leaving you wanting more.
What kind of tomatoes should I use?
Our favorite tomatoes for salsa is actually a mix, canned tomatoes from the store will work but there is no comparison to fresh. |

Cream Cheese-Deviled Ham Dip
Ingredients:
1 pk. cream cheese,softened(8oz)
1 cn. deviled ham(4 1/2oz)
1/4 cp. dry red wine
3 tbs. finely chopped dill pickle
1 tsp. instant minced onion
1 tsp. Worcestershire sauce
1/4 tsp. instant minced garlic
1/4 tsp. dry mustard
Preparation:
Beat cream cheese, deviled ham and wine in small mixer bowl until creamy. |

HOT BROCCOLI DIP
Ingredients:
1 (10 oz.) chopped frozen broccoli, thawed
1 stick margarine
1 med. onion, chopped
1 (10 3/4 oz.) cans of cream of mushroom soup
14 oz. Velveeta cheese, cut up
1 to 2 1/2 oz. can mushroom stems and pieces
Preparation:
Combine first 3 ingredients in a saute pan and cook until onions are clear. Transfer to the slow cooker/Crock Pot. Add soup, cheese, and mushrooms, heat on low for about 1 1/2 to 2 hours, or until cheese is melted and mixture is hot. Dip with large corn chips or can be poured over baked potatoes. Freezes well.

Diabetic Cranberry Jelly
Ingredients: 1 c. unsweetened grape juice 1/4 tsp. lemon juice 2 tbsp. sugar substitute 1 tbsp. plain gelatin 1 tbsp. cornstarch
Preparation: Mix
lemon juice, sugar substitute, gelatin and cornstarch. Add fruit juice
and stir well to mix. Boil hard for 3 minutes, stirring constantly.
Makes 1 small jar. Store in refrigerator.

DIABETIC WHIPPED CREAM
Ingredients:
1/3 c. instant nonfat dry milk
1/3 c. ice water
1/2 tsp. liquid sweetener
Preparation:
Chill small glass bowl and the mixer beaters. Combine ingredients and whip on high speed with mixer until consistency of whipped cream. Makes about 10 servings of 2 tablespoons

Baked Fresh
Salmon Steak
Ingredients: 3 lb salmon steak ¼ lb chopped mushrooms 1 medium onion, minced 2 tablespoon minced
parsley ¼ teaspoon tarragon 1 shake pepper and salt 2 tablespoon butter
(optional) ½ cup sherry 1/3 cup fine bread crumbs
Preparation: Soak lid of
clay cooker. Cut salmon in half and lay both pieces in cooker. Sprinkle with
mushrooms, onion, and parsley and tarragon mixed. Add salt and freshly ground
black pepper to taste. Dot with butter and pour sherry around. |

APPLE CAKE
Ingredients:
1-1/2 cups flour 3 teaspoons Baking Powder 1/2 teaspoon salt 2 tablespoons shortening 1/2 cup milk 4 or 5 apples 1/2 cup sugar 1 teaspoon cinnamon
Preparation:
Sift together flour, baking powder and salt;
add shortening and rub in very lightly; slowly add milk to make soft dough and
mix. Place on floured board and roll out so it is a ½ -inch thick. Put into
shallow greased pan. Wash, pare, core and cut apples into sections; press them
into dough, sprinkle with sugar and dust with cinnamon. |

Grilled Peaches
Ingredients:
1/2 c Worcestershire sauce
1/2 c honey
1/2 c butter or margarine
1/2 c light brown sugar, Packed
1/2 c dark rum
4 peaches, cut in half and cored*
1 vanilla ice cream
Preparation:
To prepare sauce, combine Worcestershire, honey, butter, sugar and rum in 3 quart saucepan. Bring to a full boil overmedium-highheat, stirring often. Reduce heat tomedium-low.
Simmer 12 minutes or until sauce is slightly thickened, stirring often.
Remove from heat; cool completely. Brush peach halves with some of
the sauce. |
