Lamb Kabobs
Ingredients: 3 lbs. Lamb cut in 1 ½ inch cubes 8 peeled onions 2 green peppers cut in 1 inch pieces 1 tsp. dried oregano Salt and Pepper to taste ½ Cp. Dry red wine ¼ Cp. vinegar or lemon juice 3 Tbs. oil 8 small tomatoes
Preparation: Put lamb cubes, onions, and peppers in a bowl or a clean
coffee can. Sprinkle with oregano, salt and pepper. Mix wine, vinegar and oil;
pour over meat and vegetables. Cover and let stand for several hours. When
getting ready to cook thread lamb, onions, green pepper pieces and small
tomatoes onto skewers. |

Broccoli & Lamb
Ingredients: 1 10oz. bag frozen broccoli 6 Slices of Swiss Cheese 8 thinly slice Lamb steaks 2 Tbs. butter 2 Tbs. flour 1 cp. Milk 1 Tbs. Mustard with horseradish 1/2 tsp. salt Dash of pepper Dash of Worcestershire
Preparation: Place broccoli on the bottom of 9 inch cake pan. On top place 2 slices of cheese and then 4 slices of Lamb. Continue layering with the last layer being cheese. In a small sauce pan melt butter and stir in flour. Slowly add milk stirring until the sauce thickens. Add the rest of the ingredients and pour over the Lamb and cheese. |

Lamb & Chicken
Ingredients: 6 eggs 2 lamb's kidneys 1 Cp. bread crumbs 2 Tbs. of butter 2 Tbs. of flour 1/2 pint of chicken stock 1/2 tsp. of salt pepper to taste
Preparation:
Split the kidneys, cut out the tubes; scald them, drain, and
cut them into thin slices. Put the butter into a saucepan, add the kidneys, stir until the kidneys are cooked, then add the flour, stock,
salt and pepper; stir until boiling. Grease a shallow granite or silver
platter, add the eggs, sprinkle with the bread crumbs and put eggs
in the oven 350 degrees until they are firm, then pour the lamb over the eggs,
arrange the kidneys around the edge of the dish and send at once to the table. |

Real Irish Stew Ingredients: 1 1/2 lb Mutton,cut into pieces Parsley sprigs 6 Carrots,sliced 2 lb Potatoes Salt and pepper 1 lb Onions Preparation: Place meat and vegetables in saucepan and cover with cold water. Add salt and pepper as required and flavor with a few parsley sprigs and add carrot slices. Slowly bring to a boil and skim off the top. Simmer over a very low heat for approximately 2 hours or until the meat is tender. Note:You can probably substitue lamb for the mutton and not need to cook as long. |

Lamb & BBQ Sauce Ingredients: 4 tbs. margarine 2 onions, sliced 4 slices of bacon 6 lamb shanks seasoned flour (salt, pepper Etc.) 14-15 Oz. can Tomato soup 2 cups water 2 tbs. brown sugar 2 tsp mustard 2 tbs Worcestershire sauce ½ cup vinegar 4 cups cooked rice (white or wild) 3 tbs shredded green pepper 1 tsp salt Preperation: Melt butter & sauté onion & bacon. Remove. Roll shanks in seasoned flour & place in pan. |

Grilled Leg Of Lamb
Ingredients:
3 lbs. Leg of lamb, trim fat
1/2 cp. Hoisin sauce
2 Tbs. Dijon mustard
2 Tbs. Ketchup
2 Tbs. Honey
1 Tbs. Soy sauce
1 tsp. Chinese chili paste
1 tsp. Black pepper, freshly ground
2 clv. Garlic, minced
1 Tbs. Ginger root, minced

Lamb With Artichokes
Ingredients:
3 lbs. boneless lamb shoulder
1 small onion, chopped
2 garlic cloves, pressed, minced
1 ½ tsp. ginger, Ground
½ tsp. turmeric, Ground
1 tsp. powdered saffron (optional)
3 Tbs. vinegar
12 artichokes, small, wide
12 lemons
½ cp. calamata olives
2 Tbs. lemon juice (opt)
