Grilled Tuna #Recipe

Grilled Tuna Steaks

Ingredients:
4 7oz. tuna steaks    
1/4 c  fresh lemon juice     
1 Tbl  extra virgin olive oil     
2 cl garlic,minced     
2 tsp  fresh oregano,Chopped     
1 Tbs  lemon zest,Grated   
1/4 tsp  salt     
1 tsp pepper,Freshly Ground

Preparation:
Prepare acharcoal grill. Meanwhile, rinse the tuna, pat dry, and place in a shallow glass or ceramic dish.

Grilled Peaches
 
Ingredients:
1/2 c Worcestershire sauce
1/2 c honey
1/2 c butter or margarine
1/2 c light brown sugar, Packed
1/2 c dark rum
4 peaches, cut in half and cored*
1 vanilla ice cream
 
Preparation:
To prepare sauce, combine Worcestershire, honey, butter, sugar and rum in 3 quart saucepan. Bring to a full boil overmedium-highheat, stirring often. Reduce heat tomedium-low. Simmer 12 minutes or until sauce is slightly thickened, stirring often. Remove from heat; cool completely. Brush peach halves with some of the sauce.

BARBECUE SAUCE

Ingredients:
1 cup chopped celery
1 medium onion chopped
1 Tbsp. butter Sauteed until golden brown.
2 Tbsp. vinegar
1 Tbsp. brown sugar
3 Tbsp. Worcestershire sauce
1 Tbsp. lemon juice
1 tsp. salt (optional)
1 tsp. mustard
1 cup ketchup
1 cup Tomato Sauce


Preparation:
Combine all ingredients in a large saucepan. Cook slowly in a slow cooker on low for 2 -2 1/2 hours. (Gets even better when reheated)

Lamb Kabobs #Grilling #Recipe

Ingredients:
3 lbs. Lamb cut in 1 ½ inch cubes
8 peeled onions
2 green peppers cut in 1 inch pieces
1 tsp. dried oregano
Salt and Pepper to taste
½ Cp. Dry red wine
¼ Cp. vinegar or lemon juice
3 Tbs. oil
8 small tomatoes
 
Preparation:
Put lamb cubes, onions, and peppers in a bowl or a clean coffee can. Sprinkle with oregano, salt and pepper. Mix wine, vinegar and oil; pour over meat and vegetables. Cover and let stand for several hours. When getting ready to cook thread lamb, onions, green pepper pieces and small tomatoes onto skewers.

4   6 oz. salmon steaks
1/4 cup Peanut oil     
2 Tbs.  Soy sauce    
2 Tbs.  Balsamic vinegar     
2 Tbs.  Scallions, Chopped
1 1/2 tsp.  Brown sugar     
1    clove garlic, minced   
3/4 tsp.  Fresh ginger root, Grated  
1/2 tsp.  Red chili flakes, or more for your taste

Smoked Salmon
Ingredients:
1 tsp.  lime rind,Grated
1/4 cp.  lime juice     
1 Tbs.  vegetable oil     
1 tsp  Dijon mustard     
1 pinch pepper     
4 salmon steaks,1-inch thick [1-1/2,lb]   
1/3 cp. sesame seed Toasted

Preparation:
In shallow dish, combine lime rind and juice, oil, mustard and pepper; add fish, turning to coat. Cover and marinate at room temperature for 30 minutes, turning occasionally.

Ingredients:
1 large Vidalia onion
 1 beef bouillon cube
2 tbsp butter
4 tbsp Worcestershire sauce 
 
Preparation:
Peel outside layer of onion. Place beef cube in a small cutout in the top of onion. Wrap onion and butter in foil and douse with Worcestershire sauce. Close up the foil and place on grill (low heat) for 30-40 minutes or until onion is translucent. Serve over steak!

4 lbs. boneless pork loin roast   
 2  onions, finely chopped    
1 Tbs.  fresh thyme leaves  
½  tsp.  allspice, Ground   
¼  tsp.  nutmeg, Ground   
¼  tsp.  cinnamon, Ground    
 1 Tbs.  sugar    
 2 Tbs.  hot pepper sauce   
½  cp.  soy sauce    

Loving the Burger Crumbs #recipe

Burger Crumbs
 
Ingredients:
 
2 pounds ground beef
 
1 cup soft bread crumbs
 
1/2 cup chopped onion
 
1 egg
 
Salt and pepper
 
Preparation:
Have ready 8 tomato slices and 8 hamburger buns. Combinemeat, bread crumbs, onion, egg, salt and pepper. Mix lightly. Place meatmixture on a cookie sheet (with an edge so it doesn't spill over). Press towithin 1 inch of edge of pan. Bake at 350 degrees F for 20 minutes. Drainexcess fat. Top with 8 cheese slices and tomato slices. Bake until cheesemelts.

Ingredients:
 
1 1/2 lb mullet filets
 
2 to 3 limes for juice
 
1/2 c butter
 
1 t salt
 
1/2 t pepper
 
Preparation:
 
Place filets in a flat pan; squeeze lime juice on top. Refrigerate 4 hours to tenderize. When ready to cook, place on an oiled grill over hot coals and brush with butter, season with salt and pepper. Baste frequently with butter as fish browns.
