Grilled Tuna Steaks
Ingredients:
4 7oz. tuna steaks
1/4 c fresh lemon juice
1 Tbl extra virgin olive oil
2 cl garlic,minced
2 tsp fresh oregano,Chopped
1 Tbs lemon zest,Grated
1/4 tsp salt
1 tsp pepper,Freshly Ground
Preparation:
Prepare acharcoal grill. Meanwhile, rinse the tuna, pat dry, and place in a shallow glass or ceramic dish. |

Baked Fresh
Salmon Steak
Ingredients: 3 lb salmon steak ¼ lb chopped mushrooms 1 medium onion, minced 2 tablespoon minced
parsley ¼ teaspoon tarragon 1 shake pepper and salt 2 tablespoon butter
(optional) ½ cup sherry 1/3 cup fine bread crumbs
Preparation: Soak lid of
clay cooker. Cut salmon in half and lay both pieces in cooker. Sprinkle with
mushrooms, onion, and parsley and tarragon mixed. Add salt and freshly ground
black pepper to taste. Dot with butter and pour sherry around. |

Eggless Salmon Patties
Ingredients:
3 5 oz cans Salmon
1 cp. Shredded Cheese (the flavor you like)
½ cp. Butter or Margarine
1 pkg. Crackers (saltines)
Preparation:
Add salmon to a bowl adding the cheese, crackers and butter. Mix the ingredients until evenly mixed, place in the freezer for 20 minutes. Remove from the freezer,
form into patties and add to a hot frying pan, I always use plenty of
cooking oil but you do not have to. Cook until browned and serve.

Eggless Tuna Patties
Ingredients:
2 cp. Tuna
1 cp. Shredded Cheese (the flavor you like)

Preparation:
De-bone and skin tuna. Cook the tuna in oven until it will flake, usually 25 minutes at 350 degrees. Cool the tuna and
crumble it and place in a bowl add the cheese, crackers and butter. Mix the ingredients until evenly mixed, place in the freezer for 20 minutes. Remove from the freezer,
form into patties and add to a hot frying pan, I always use plenty of
cooking oil but you do not have to. Cook until browned and serve.

Tasty Fish
Do you want to get rid of the blood and fishy taste before
eating or canning your fish? Make a brine out of one ounce of salt to one quart of
water and place the fish in it. Allow the fish to soak for 10 minutes to 1 hour according to the thickness
of the fish for canning and over night for cooking. Never use this brine more than one time.

Bacon Wrapped Oysters
Ingredients: 12 oysters
12 Thin slices of bacon
Preparation:
Wrap each well-drained oyster in bacon. Skewer with wooden toothpick. Bake in pan at 350 in oven until bacon is brown.

Pork & Eel
Ingredients:
2 lbs. eels
4 small onions thin,Sliced
4 cps. potatoes thin,Sliced
1/4 lbs. salt pork,Diced
1 tsp. salt
1 tsp. pepper
1/4 cp. flour,all-purpose
hot -water
Preparation:
Make a layer of onions and potatoes on the bottom of a large heavy pot. Mix the salt, pepper, & flour together, set aside. Slice the eels into small pieces and make a layer on top of the potatoes and onions. |

steaks 1/4 cup Peanut oil 2 Tbs. Soy
sauce 2 Tbs. Balsamic

sugar 1 clove garlic, minced 3/4 tsp. Fresh
ginger root, Grated 1/2 tsp. Red chili
flakes, or more for your taste |

Smoked SalmonIngredients:
1 tsp. lime rind,Grated 1/4 cp. lime juice 1 Tbs. vegetable oil 1 tsp Dijon mustard 1 pinch pepper 4 salmon steaks,1-inch thick [1-1/2,lb] 1/3 cp. sesame seed Toasted
Preparation:
In shallow dish, combine lime rind and juice, oil, mustard and pepper; add fish, turning to coat. Cover and marinate at room temperature for 30 minutes, turning occasionally. |

Creamed Sucker
Ingredients: 2 cps. steamed flaked sucker 1/4 cp. green pepper 4 Tbs. flour 2 cps. milk 1/2 cp. chopped mushrooms 2 Tbs. chopped onions 4 Tbs. cooking oil 1 tsp. salt pinch of cayenne
Preparation:
Place cooking oil in heavy skillet, add onion and green pepper and cook 2 minutes. Blend in flour and seasonings. Slowly add milk and cook until thickened. Carefully add mushrooms and fish, and heat thoroughly.
