SWISS CHICKEN CASSEROLE
Ingredients:
6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted
Preparation:
Lightly grease Crock Pot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix. Cook on low 8 to 10 hours or high 4 to 6 hours. Serves 6.

Cheesy Chicken
Ingredients:
6 chicken breasts (boneless & skinless)
salt & pepper to taste
garlic powder, to taste
2 cans cream of chicken soup
1 can cheddar cheese soup
Preparation:
Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in the slow cooker. Cook on low for 6 to 8 hours. Serve over rice or noodles. It is really good over potatoes but we like this on brown rice.

RANCH CHICKEN
Ingredients:
3 lbs. fryer chicken parts
1 c. Hidden Valley Ranch salad dressing, prepared 4 c. cracker or bread crumbs Salt
Pepper
Paprika
Preparation:
Wash and dry chicken parts. Dip into prepared salad dressing. Spoon crumbs over the dressing to cover. Place chicken in foil-lined pan. Sprinkle with salt, pepper and paprika. Bake, uncovered, at 375 degrees for 1 1/4 hours. Serves 6.

CHICKEN SALAD
Ingredients:
1 can or 5 oz. cooked chicken 1/2 c. chopped celery 1/3 c. chopped sweet pickle 1 boiled egg, chopped 1/2 c. salad dressing
1 onion slice chopped
Preparation: Mix and serve.

BARBECUE
CHICKEN
Ingredients:
1 Chicken, cut up and skin removed 1 cup ketchup 3/4 cup brown sugar 3 tablespoons Worcestershire sauce
Preparation:
Place chicken in slow cooker. Combine remaining ingredients and pour over chicken. Cook 4 hours on high or 8-10 hours on low. Delicious!

BAKED BREASTS
Ingredients:
8 chicken breast halves, skinned
8 slices Swiss cheese
1 can cream of chicken soup 1/3 c. white wine
1 c. herb stuffing mix
1/4 tsp. melted butter or margarine
Preparation:
Put chicken in very lightly greased baking dish. Top with cheese. Combine soup and wine. Spoon over chicken. Sprinkle with stuffing. Drizzle melted butter over chicken. Bake at 350 degrees 45 to 50 minutes

Whiny Chicken
Ingredients:
4 Chicken Breast
1 can cream of chicken soup
1 pkg. onion soup mix
1/2 c. red cooking wine
Preparation: Put ingredients in heavy pan. Put chicken parts on top. Cover and bake for 1 1/2 to 1 3/4 hours at 350 degrees.

Lamb & Chicken
Ingredients: 6 eggs 2 lamb's kidneys 1 Cp. bread crumbs 2 Tbs. of butter 2 Tbs. of flour 1/2 pint of chicken stock 1/2 tsp. of salt pepper to taste
Preparation:
Split the kidneys, cut out the tubes; scald them, drain, and
cut them into thin slices. Put the butter into a saucepan, add the kidneys, stir until the kidneys are cooked, then add the flour, stock,
salt and pepper; stir until boiling. Grease a shallow granite or silver
platter, add the eggs, sprinkle with the bread crumbs and put eggs
in the oven 350 degrees until they are firm, then pour the lamb over the eggs,
arrange the kidneys around the edge of the dish and send at once to the table. |
