Cajun Chicken Sandwich 2 boneless, skinless chicken breast halves, butterflied or pounded thin 3 tablespoons Cajun seasoning Butter 2 toasted buns, split Preheat frying pan over med-high heat on top of stove. Smoother chicken in Cajun seasoning. Place a small amount of butter in pan and place seasoned chicken breasts in pan. Cook until seasoning is black, then turn and cook until done. Serve on toasted bun with your favorite sandwich toppings.

SpicyFish Soup
Ingredients:
2 lbs. firm white boneless fish cubed
4 cp. water
2 tomatoes
1 onion
3 sprigs fresh parsley or 1 tsp. Dried parsley
2 jalapeno peppers seeded 2 tsp. salt
1 tsp. Dried thyme,
Preparation:
Wash fish, onoventop place in large saucepan, and add 4 cups water. Finely chop tomatoes, onion, parsley, and peppers and add to water. Add salt and thyme and stir. Bring mixture to a boil over high heat. Reduce heat to low, cover, simmer for 20 minutes or until fish is tender. Serve immediately. |

CRAWFISH BISQUE
INGREDIENTS:
1 - 1/2 cup crawfish tails
1 - 1/2 pint cold water
1 clove garlic, mashed
1 tablespoon green onion
1/4 cup cooking oil
1 pint cold water mixed with 1/2 cup crawfish fat
1/4 cup all-purpose flour
1 teaspoon salt
1 small onion, chopped
1/4 teaspoon sugar
1 stick celery, chopped
1/4 teaspoon red pepper
1 bay leaf
1 tablespoon chopped parsley
3/4 cup whole tomatoes, canned or fresh, chopped |

CRAYFISHETOUFFEE
INGREDIENTS: 1 1/2 Tsp. all purpose flour 1 Tbs.parsley 1 Tsp. salt 2 very thin slices lemon 1/4 Tsp. cayenne pepper 1 Tbs. green onion 1 lb. cleaned crayfish tails cleaned 3/4 Cp. of crayfish fat (water from boiling) 1 1/2 Tbs. tomato paste 1Stk. margarine or butter 1 medium onion, chopped fine
Preparation: Use a saucepan with a tight fitting lid to etouffee, (French for smother). Season crayfish tails with salt and pepper, set aside. Melt butter, add onion, cook over medium heat until tender. |
