APPLE CAKE
Ingredients:
1-1/2 cups flour 3 teaspoons Baking Powder 1/2 teaspoon salt 2 tablespoons shortening 1/2 cup milk 4 or 5 apples 1/2 cup sugar 1 teaspoon cinnamon
Preparation:
Sift together flour, baking powder and salt;
add shortening and rub in very lightly; slowly add milk to make soft dough and
mix. Place on floured board and roll out so it is a ½ -inch thick. Put into
shallow greased pan. Wash, pare, core and cut apples into sections; press them
into dough, sprinkle with sugar and dust with cinnamon. |

APPLE GLAZED PORK ROAST
Ingredients: 4 lb. pork loin roast 3 T. brown sugar 1 t. ginger, ground
Preparation: Rub roast with salt and pepper. Brown pork roast under broiler to remove excess fat; drain well. Core and quarter apples. Place apple quarters in bottom of slow cooker. Place roast on top of apples. Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well. Cover and cook on Low for 10-12 hours, until done.

Red Hot Apple SauceIngredients:
1 lb. of good cooking apples Add Sugar to your taste 1 tsp. cinnamon 1/2 cup red hot candies
Preparation:
Pare, core, and cut the apples in small pieces, cook on oven adding a few spoonfuls of water to prevent burning; when quite soft rub the apple through a sieve, and sweeten the sauce to taste, add cinnamon and red hots. Place back on oven and stir until candies are dissolved. When you rub the sauce through a sieve it ensures the sauce will be so that the pulp is even and not chunky.

Coconut & Peanut Butter Dip
Ingredients: 2 tbs. peanut butter 1 tbs. toasted coconut 8 oz. vanilla yogurt
Preparation: Add the peanut butter and coconut to the yogurt mix and use as a dip for apple or pear slices. Or just eat it with a spoon. Serves 1

Applesauce-Granola Cookies
Ingredients:
1 cp. packed brown sugar
1/2 cp. shortening
1 tsp. vanilla
1 egg
1/2 cp. applesauce
2 cp. all-purpose flour
2 cp. granola
1/2 tsp. baking soda
1/2 tsp. Salt
Preparation:
Pre-heat oven to 375º. Beat brown sugar, shortening, vanilla and egg inlarge bowlwithelectric mixeron medium speed, or mix with spoon. Stir in applesauce. Stir in remaining ingredients. Drop dough by rounded tablespoonful’s about 2 inches apart onto ungreased |

APPLE PORK ROAST
Ingredients:
4 lb. pork loin roast
6 apples
1/4 cup apple juice
3 T. brown sugar
1 t. ginger, ground
Preparation:

APPLE CRANBERRY COMPOTE Ingredients: 6 cooking apples, peeled, slice 1 cup fresh cranberries 1 cup sugar 1/2 tsp. grated orange peel 1/2 cups water 1/4 cups port wine Sour cream, (low fat) Preparation: Arrange apple slices and cranberries in slow cooker. Sprinkle sugar over fruit. Add orange peel, water and wine. Stir mixing ingredients. Cover, cook on low 4-6 hours, until apples are tender. Serve warm fruit including the juice, top with a dab of sour cream. |
