Camp Hash
Ingredients:
2 TB cooking oil 1 lg. onion -- chopped 2 garlic cloves -- minced 4 lg. potatoes peeled and cubed 1 lb. smoked sausage cubed 1 4 oz. cn. chopped
green chilies 1 cn. whole kernel corn drained Preparation: In a Dutch oven, heat oil.
Sauté onion and garlic until tender, and add
potatoes. Cook uncovered, at
medium heat for 20 mins. stirring occasionally.
Add sausage; cook and stir until potatoes are tender and well browned,
about 10 mins. Stir in chilies and corn; cook until all the way hot. |
