Ingredients: 2 lbs. firm white boneless fish cubed 4 cp. water 2 tomatoes 1 onion 3 sprigs fresh parsley or 1 tsp. Dried parsley 2 jalapeno peppers seeded 2 tsp. salt 1 tsp. Dried thyme, Preparation: Wash fish, on oven top place in large saucepan, and add 4 cups water. Finely chop tomatoes, onion, parsley, and peppers and add to water. Add salt and thyme and stir. Bring mixture to a boil over high heat. Reduce heat to low, cover, simmer for 20 minutes or until fish is tender. Serve immediately. |
