Fried Eel #recipe

Ingredients:
3 lbs. eel, skinned and cleaned
1 cp. Milk
¼ tsp. Salt
¼ tsp. Pepper
¼ tsp. Onion or Garlic Powder
2 cp. Flour
2 tbs. Butter
1 quart Zipper bag
 
Preparation:
Cut eel into 2 inch chunks and soak in the milk. Place flour, salt, pepper, and onion powder in the zipper bag. Add the eel to the flour mixture in the zipper bag and coat the eel generously with the flour. Place the butter in a frying pan and quickly brown the eel chunks, when evenly browned reduce the heat and slowly cook the eel until tender. Compliments tomato, spinach or with a creole sauce.  3lbs. of eel serves 6 to 8.
