Lamb With Artichokes #recipe

Ingredients:
3 lbs. boneless lamb shoulder
1 small onion, chopped
2 garlic cloves, pressed, minced
1 ½  tsp. ginger, Ground
½  tsp. turmeric, Ground
1 tsp. powdered saffron (optional)
3 Tbs. vinegar
12 artichokes, small, wide
12 lemons
½  cp. calamata olives
2 Tbs. lemon juice (opt)
 
 
Preparation:
Trim fat off lamb cut me into 1 ½ " chunks. In a 5-6 quart pan, combine lamb, onion, garlic, ginger, turmeric, and saffron. Cook covered, over medium heat on oven top for 30 minutes. While waiting for the 30 minutes, in a bowl combine vinegar and 1 quart water. Prepare artichokes, trimming off stems, tough outer leaves, and sharp tips,
leaving pale, tender interior leaves. Cut in half lengthwise; scoop out and discard hairy chokes. As artichokes are trimmed, put in and cover in vinegar-water. After meat cooks 30 minutes, turn heat on high, uncover pan, and start stirring often until juices evaporate and meat browns,15-20 minutes. Stir in 2 cups water; simmer, covered, for 1 hour.
