Venison Habanero Sausage #recipe

Ingredients:
1 ½ lbs.   pork butt
1 ½ lbs.   venison
½    lbs.   onion
2     habanero chilies, minced
½    tsp.   minced garlic
¼    tsp.   dried thyme
1     tsp.   chopped fresh parsley
1     bay leaf, remove stem and chop finely 
½    tsp.   paprika
1     tsp.   ground black pepper
½    tsp.   Coarse kosher salt
2     tsp.   red wine vinegar
1     pkg.  Sheep Casings
 
Preparation:
Grind with 1/4" plate. Mix and stuff into sheep casings forming 6" links.  Hang 1 hour, cook on a grill, oven or throw them in the freezer.
