RABBIT MINCE-MEAT #recipe

Ingredients:
1  Cp of rabbit parboiled in salted water drain and chop finely.
1  Cp chopped apple.
½ Cp finely chopped suet.
½ Cp seeded raisins.
½ Cp currants.
1  Cp molasses or syrup.
2  Tbs. sugar.
1  Tbs. cider, lemon juice, fruit juice or vinegar.
¼  Cp  chopped watermelon pickles or green tomato pickles.
1   Tsp. cinnamon or nutmeg.
1   Tsp. salt.
½  Tsp.cloves, mace or other spice.
1   Can of Chicken Broth
 
Preparation:
Mix together all ingredients except the meat, add the chicken broth and simmer for about 1 hour. Add the meat. Let cool and enjoy, or can be canned.
